Monday is my birthday, and I am skipping any pretense at Passover despite the unfortunate confluence of dates because I must. have. a cake. Imust.
It's already Double Essay Oh My God season, so I'm holding off on a party until May.
I'm baking my own cake on Sunday. This isn't a sad thing, it's just that bakery cakes are expensive and often not very nice. They have to make them for a TON of people, after all, and turn a decent profit (i.e. have easyish recipes that bear constant reproduction without much time-wastage, source very affordable ingredients and make the results keep), which is not always, but sometimes, a combination that results in lackluster short-cut taking. If it's choosing between a chain bakery or a small bakery I don't know well for an important day rather than a test-slice, I'd rather bake it myself, because I'm a knit-picky control-freak.
I've been through the whole Celebration Cakes tag on Smitten Kitten (http://smittenkitchen.com/category/cake/celebration-cakes/page/7/) and found several VERY nice things, but nothing that really screamed that it was the One True Cake for me.
I'd love any and all suggestions/recipes/thoughts--it'd be good to have as a resource even if I can't make it tomorrow. What comprises your ideal cake(s)?
